I know that mine is a very newbie question, but I want to try (and share results) to bake an Octane scene and export the stuff to Unreal.
Can anyone suggest me about the first step:
1) what baked map I am able to obtain from Octane side (diffuse, normal, AO, specularity,..?) and what baked map is needed to re-create the scene in Unreal?
2) Could I bake all the scene objects in one shot ?

You can get only one bakeID on one render. Did you checked my bake scene example? It's possible to render out several passes at one run as normal render out. But you should tweak uv-mapping properly.
