I'm not sure, if this is a Blender or Octane issue:

There's the smooth checkbutton in the octane materials. But: Imagine a 3D version of the letter C (extruded text). How do I end up with a smooth version of the letters faceted, curved sides, but retaining the sharp edges of the letters between top and bottom and the sides as well as not having some strange smoothing across the flat top and botton (which should remain flat)?

Basically a bit like the flat/smooth button in the left menu of the 3D view.. which smoothes things while in edit mode/solid of the faces I marked with it etc ... but it seems octane doesn't care for it and purely works with this global material smoothing?

Add a smooth material to the parts you want smoothed and a flat material to the parts you don't want smoothed.

I agree it would be useful if it used Blenders smooth/flat properties in the material itself. Maybe one for a future release

You can also try using a smooth material and adding an Edge Split modifier.
