To reset or 'sphere project' UV: tab to edit mode on the sphere > press 'A' to make sure all the faces are selected > 'UV' menu (next to 'Face', 'Edge' menus etc.) > choose 'Reset' or 'Sphere Projection'

It's something to do with the UVs.
If you disconnect the Displacement node, it comes back.
...or, put the sphere in Edit mode and reset the UVs - that works, too.

I tried applying the nodes to the Cube instead of the Torus, but for some reason I don't see any difference.

The main issue with how you have your setup is that you are applying the volume medium to the inflow object (torus). You need to hook up the volume medium onto the domain object (cube).
