This bug is a little bit difficult to explain. First you need need to create at least 2 AOV node trees in Octane Render AOV editor:

Starting this point Blender won't know for sure which AOV is the real active one. It will consider as the last active AOV the one where you changed/updated the imputs to to Render AOV Group and will ignore your render AOV setup preferences.
My guess this is happening because Blender don't really know which data-block is the default one and switches to the one which was active the latest ignoring the Render AOV Node Graph setup preferences. This should behave like the World settings in Blender Cycles where you have the default active world but you can create/duplicate/edit new ones.
This is a pretty big issue since if you have a couple AOV setups it constantly mess up your output and is difficult to keep the track of in different scenes/takes.
