I've downloaded a couple of different versions of Octane and can't find any instructions whatsoever for Installing on a Mac. Very frustrating.

please consider that M1 support is still considered experimental.
If you have a free Prime tier, please stay with Standalone for now.
If you have Studio or Enterprise license you can try with PR8 version.
About c4doctaneX plugin installation, please have a look at the first three minutes of this video:

For a correct installation of c4doctane plugin, firstly you need to update your Maxon C4D to the latest build, (R21.155, S22.118), or the plugin will not be correctly loaded, please go to c4d menu Help/Check for updates.
You need to create the plugins folder inside the c4d R2X directory.
The installation paths for Mac is:
HD\Applications\Maxon Cinema 4D R2X\plugins\c4doctane (You have to create the plugins folder!)
Note that you always need to remove from the c4doctane folder, all the unnecessary c4doctane-R2X.xdlib files not related with R2X specific version, and leave only one c4doctane-R2X.xdlib file in ../plugins/c4doctane directory. To finish the installation, you need to allow the c4doctane plugin and library in System Preferences/Security and Privacy panel, and restart C4D a couple of times. With M1, you also need to have enabled Rosetta 2:

Agreed. I have verified that I have Rosetta 2, allowed all permissions necessary, and still Octane will not load in C4D. I can get things to work in Blender, and I can get the standalone to render, but there is nothing I have been able to do to get it to work in C4D. Is this still a known issue? Has ANYONe been able to get C4D plugin for Octane to run on an M1 Big Sur Mac?

unless you have an M1 chip, please follow this directions:

If you have a Mac with M1 chip, you need to wait for next version for plugins, and work only with Standalone for now.
If not, which version of Mac Os have you installed?
Which GPUs dfo you have in your Mac?
Which version of c4d are you using?
