I'm sure this is a stupid question, but as the title says - can you animate camera settings, such as aperture?

I may say something silly, but: To my knowledge, Blender can animate any field you can put a number in by storing it in a frame and then edit the curves between those marks? I'd have to check though.

Thank you voon, not silly at all.

But what I don't understand is how you store the information - if I press 'i' (with the camera selected) to insert a keyframe, camera properties like aperture are not on the list of available options?

OK, got it: You just hover over the desired camera option and press 'i'.
