How to simulate the double slit interference experiment?

Short answer: You can't.

Long answer: Light propagation in Octane (and most other renderers) is based on a ray model without interference. And without interference you don't get the effect you are after.

this would require light transport down to quantum mechanics for which current computers are too slow... Maybe in 5+ years...

No need to simuate quantum mechanics, according to this paper. I don't understand all of it, but I do understand that they seem optimistic this can be implemented in existing raytracing solutions.

"simulated" maybe, but not truely modelled I'd say. Like a bump map might simulate bumps but it's not truely modelling the situation. But it is a very interesting paper.
