I haven't used Forest Pack.

Geometry load time into Octane is roughly proportional to the number of polys. So if you have 1 blade of grass and 1 tree and instance them, it will be very quick. The more (non-instanced) grass and tree polys you add, to longer the load time will be. How long (for Forest Pack) I don't know.
Will I have scene size limitations on my 4gb GTX 680?
VRAM is more tested by textures than geometry - you can generally load a /lot/ of geometry onto a card.
Can I really expect 'real time' rendering?
That depends on the amount of geometry in the scene and how zoomed in you are (ie. distance shots seem to render a lot quicker than close-ups). I think people looking for 'real time' rendering would be using multiple video cards.
