I would like to know what is the best graphic card for octane between a GTX 560 ti 1gb, a GTX 560 ti 2gb, a GTX 570 1.25gb or a GTX 560 ti 448 cores, because GTX 470 is no longer available.

Well a card with 1gb or 1.28 gb vram is going to offer limited space for Octane data.
Unless you only have very limited scenes to render I would encourage you to pick one with 1.5 or 2gb vram as a starting point. If you have more demanding scenes like for archviz then 3gb would be more appropriate.
Of the ones you list the GTX560ti 2gb would be the better choice even though it is not the fastest.
Speed wise its not that far behind a GTX570 though. It is good value for Octane.
The 470 ran hot, was noisy anyway....you won't miss it

I use scenes with sketchup for architecture, I need to save time, the scenes are not too complex so I hesitate between the GTX 570 1.25 gb or GTX 560 ti 2gb. Thank you for telling me which one is faster, my boss give me a budget to respect.

the 560 with 448 cores is not listed, but its still less cores than the 570, and also has less memory bandwidth, so it will be still notably slower...
