I've tried and it doesn't work. What are my options? Correctlly unwrapping my geo is impossible i think. I was counting on Triplanar and now I'm in trouble.

Sorry, I'm afraid that there is no solution for this limitation yet. That's a common issue with all projections other than UV. Right now the only solution would be to bake the Triplanar Mapping to the UV, then use the result with a UV projection.
Triplanar projection is definitely dedicated to static or animated/non deformed meshes.

Hi guys,

Still no solution to this? It would be super useful to stick the triplanar projection result to the mesh / UVs without the need to bake!
If there's no solution, a follow up question: Is it possible to bake the texture to UDIMs?

Nope, not yet, sorry. The support of the "rest" attribute is planned for Octane 2022.x, so hopefully, this could help with this issue.

I agree with FakePilot on this one. While Redshift can have a Triplanar projection on deforming objects using a @rest attribute, Octane still misses this feature.
I think this feature should be suggested to Octane core devs again.
