I just spotted a bug that will have prevented the "Fallback to source" channel from working. Is it important to you to be able to choose Iray Uber properties from the list even when the material is not currently assigned to a surface that uses the Iray Uber shader?

Yep. At this point I'm hoping to be finished with supporting the 2021.1 features in the next couple of months.
