I have modelled a panel on the front of bottle, the panel has a debossed area with a letter C. I have applied a composite material to the panel with a red base material, a white material, and a black and white image for displacement.

The displacement is affecting the whole panel instead of just the area of the 'C'. How do I fix this? I know I've seen this problem before...

The panel is an SDS surface with plenty subdivisions, the displacement file is 16bit, UVW projection etc.

Hi,
if you are using Texture Displacement, you need to use a polygon selection to restrict the displacement where needed.
If you are using Vertex Displacement, you can use the Border Mode in the ImageTexture node, to remove the displacement tiling.
