Render output now blownout

Hi there, I was hoping someone could help me with an odd issue

I produced a render, that was spot on what I was looking for. Saved and closed the programme and material. I have come back today to run more renders only to find that they are now really blownout. I have tried altering the hdri power to rectify this, but for some reason altering the power does nothing in the live viewer. Before if i turned it to 0 it would go fully black, but now for some reason it stays exactly the same no matter where I set the power

Any ideas what this issue might be ?

Is there a way to reset to default settings incase this might help ?
