Im getting about 2hrs or so to get a decent render on this scene, figuring I have some bad settings.
Hoping the Octane gods can give me guidance.

I can share the scene if need be.
I have 2x RTX 2080TI's in NVlink.
My scene uses 4K-8K textures and has mainly quixel assets.
I have 2 Octane scatters in vertex mode for the grass (Grass is using lowest LOD -- ie plane geometry).

Using as a mist element and to hide the scene further

Lastly I have 30GB of Ram allocated to OOC. For some reason this scene takes up 17GB of RAM :<

Thanks for any help!!

That seems crazy long for that scene and that hardware. The first thing I'd do without diving into it too deeply, is narrow down the issue by trying it with and without the fog. If fog is the culprit, I usually go with the 2D Specular Material fake whenever possible. It's very fast, and looks good in many situations, and I suspect it will work fine here.

Are the leaves modeled, or are you using planes with alpha map?
Instanced alpha planes are killing Path Tracing.

Also please have a look at these discussions about recessed emitters:
