I currently have 2x 780s,a nd I'm upgrading to 2x 1070's and I'm wondering what style GPU I should get? Is the founders editions better as they blow the air out? Or should I get a GPU with a large heatsink + fans such as a EVGA FTW.

If the cards will be sandwiched ininde a case then take a classic fan with the founders edition.
If the cards will be in an open rig with much more space between them then take the STRIX model with 3 big fans.

Why is founders edition better if the setup is sandwiched?
Just curious! ;)

Because the founders cooler pushes air front to back and these parts are not obscured, they are free to take in the air and push them back.

In the STRIX model air is taken in from the top of the card where the big fans are, this area is not free if there is another GPU card stacked on top, there is only a couple of milimeters of free space and these models are not designed to work in such environment. If you leave one PCI slot empty (dual slot) between those cards then they could cool themselves but the idea is to have as much GPUs as possible.
