I will try to replicate this issue, so that we can quickly get a fix in for this before releasing the next update.
Please confirm that these steps will replicate the same problem:
1. Select a Material
2. Open the Octane Material Editor dialog
3. Update the UV property of the chosen material.
4. Save the scene and close SU
5. Re-open the scene and examine the altered material for the bug

This is a very very old bug and well documented before. I must admit that I have not used the Octane plugin for SU for a while now but I'll see if I can reproduce it or get the issue from an old file. If I remember correctly I saw the issue a lot with specularity maps but I'd need to check...
I am not at all motivated to actually purchase the upgrade to v3 due to the poor development history for the product, though recent attempts are a bit more encouraging. Can I use a trial version of 3 with an older V2 plugin still installed?

The feeling is understandable. We have been pushing development forward as of late - we appreciate you noticing that. The nodal approach is the next big feature currently in progress as of now.
You can have the V2 and V3 standalone installed on the same machine at the same time, but you cannot have more than one version of the plugin installed to the same version of SU on the same machine. If you have SU 2015 and 2016, you can keep running V2 on one of the versions, and test the V3 demo on the other.
