I clicked on an animate button while messing around and got, "No Render Target" selected or something. So I added a render target on the NGE and connected it to an OBJ but wasn't sure what its function was. Is it some sort of higher level folder for a sub selection of parameters, or an adapter of some sort that can be modified in some ways that the connected-to content cannot be? Just not sure how it is used.

They are very useful in standalone and you can have as many of them as you want, all with different cameras, environments, etc. Scripts use them so they know where to start in the node graph. See here for more information:
