I currently have a GTX 760 which is fine for most of my rendering needs in Octane. I'm thinking of getting a GTX 660, assigning the 760 to Octane and letting the GTX 660 handle the UI. Will the GTX 660 be enough for the UI?

Hi, the TX 660 should be fine for the Modo UI.
