Octane has to load everything into all the cards, so the limit in your scene is based on the lowest VRAM of your cards since everything over that wont load in the smaller cards. So, on scenes requiring less VRAM, use both, but if you need more VRAM, disable your 570.
Make sure your 680 is for your display so that extra "wasted" VRAM is used for display purposes.

Mmm, unfortunately almost all my scenes requires more than 1.5GB, that's why I purchased a 4GB card.
Oh well, I can still sell the two 570 and get some of the money I've spent for the 680 back.

until then, you can use the 570 as your primary display and disable it in Octane. This will allow you to use the full 4 GB from the 680 and will have Octane run smoothly ans allow you to use other programs while Octane is running with 0 slow down.
