I'm putting together a system where I can run either 3x580 GTX or 4x580 GTX all being 3Gb versions. The 4x will require more power, and hence generate more noise and heat. Is the performance improvement in terms of time to render linear or is it diminishing? If it is diminishing, are there any numbers on that somewhere, going from 3 to 4 GPUs?

It should scale pretty much linearly. I.e. 3 GTX 580 should runs ~3x as fast as 1 GTX 580 and 4 GTX 580 would run ~4x as fast.
