Hello,
Would it be possible to have the option to render specular object as diffuse object when we set the clay mode as "grey" please ?
Thank you in advance

That should effectively be the default behavior.
Tested (double-checked) in Standalone 2024+ with both the little toolbar "Clay mode" and Kernel "irradiance mode", solely diffuse shading, no specular refraction / reflection.
When "irradiance mode" or "colored clay mode" is enabled, with a specular material (glass, refraction), the sphere surface is rendered as diffuse shading with refractive caustics (indirect rays).
