OK I got something working so far. Here's a quick outline of the steps if anyone else is interested:
1. Installed TurboVNC and VirtualGL on CentOS 5.6 http://www.virtualgl.org/Main/HomePage
2. Installed TurboVNC on OSX
3. Connect from Mac to Linux using TurboVNC as normal
