I've reached out to Grant, so we'll see if I can get him to explain his texture in more detail. I'll post back with anything I learn from him if he ever responds.

He describes it in quite a lot of detail in his training so he might be a bit reluctant to just give his secrets away!

It's a pretty straightforward approach though, Specular SSS + Diffuse SSS Mixed then that combo mixed with a Sparkley emissive map.

I figured it was SSS combination, but what i'm more interested in is that grainy/fuzzy look. I'm not sure how he's achieving that. Is it displacement? Normal maps? What really sells that snow is its granular look.

You can probably achieve that with the diffuse roughness option that was added in one of the newer versions

That option gives it a sandpaper like structure, grain like
Octane 2022.1.1 nv535.98

I played around with my snow texture some more. Got it down to just one diffuse shader, renders faster, and in my opinion looks even more realistic. Looks closer to Grant's snow as well. Uses Octane's noise for the bump, but for some reason Octane noise doesn't work with displacement, so I had to revert back to C4D noise for that. Displacement is a combination of two different noises.
