I'm wondering if this is possible or not, but...

Right now we have the options of a full color map (image) or a grayscale map (floatimage). I was wondering if it would be possible to add a parameter to the image node for cases where the color map is too intense: Adjusting the saturation level of the image would give us something between the extremes of [image] vs [floatimage].

Current workaround is to adjust the saturation of the texturemaps in Photoshop, but it could be a useful feature in Octane, particularly in terms of image-based lighting. Or is there already something like this in place and I haven't found it yet?

If you connect the "image" node to a "Color Correction" node, you can adjust the brightness, black_level and gamma. The gamma might help you de-saturate the image.

No, you haven't missed anything in octane.
I have suggested before to someone else that they use a mix texture. Load the image normally into one input and the same image as a floatimage in the other input. You can then use the amount slider to go between full color and full black and white.
