You can only have one UV-Set at the moment.
That´s because Octane use the OBJ format which only support one UV-Set per object.
I think there is a plan to use multiple UV-Sets at the future.

Not sure what you mean by Displacement "over" texture maps. I'm using an image to emboss a logo onto a mesh with displacement. Doesn't show up in the Octane preview window
