In my personal experience the Titan's was recognize only when I upgraded to 10.9 .

If you can't install 10.9 I'm afraid you can't run GTX 680 or Titan. I did the test with 10.8 and the Graphic card wasn't recognize

Yes on OS 10.9 you have all the titan's graphic card suported.
The Titan is better , it has 6G memory.
In your mac you can't have only the GUI card bcse Octane, Davinci don't like at all that the GUI card is runing to compute.

If you install 10.9 the Nvidia drivers for GTX 680 + Titan iare recognize by the system.
You have to have an expansion box with GPU in it, bcse Macpro don't have enough power for the TItan's card.

For the thunderbolt, I can't say if it's working well or not bcse I can 't test it properly right now, but I can say that In my old Macpro 2010 It Was plug In PCIe 2.0 and I had no issue with Octane an Davinci resolve. The system worked fine.
