That's very odd - there is a setting for saturation in the Render Target panel but it is set at 1 by default and I can't imagine you have set it to 0 accidentally. So I can't think why this happening. I hope Sighman will be able to sort you out.

I've not used that specific material but I have rendered stuff with displacement and not noticed a dramatic fall-off in render speed, in fact I have been very impressed at how Octane handles displacement.
