Is it possible that the chips instead of pilling it up all nice that they bounce a little like real world physics?

Yes if you use 2012 use massfx to initiate physics.
I dont know if your 3 images are steps of the final if so then you dont need pflow, then just drop the coins with massfx and gravity and animate the chips over to the stack from a final frame in the simulation that you bake.
Realy depends what you want.

That's exactly what i did. Pilled all coins, animated with path animation to the stack and then run massfx with a shelled cilinder acting as static rigid body so the chips won't fall over the place. Baked everything and adjusted timings. It was quite simple actually.
