My network rendering box currently has 2 1080 Ti’s (one water cooled and one hybrid) and an air cooled 1070 Ti. This is all powered with an EVGA Super Nova 1200 Watt PSU and everything runs fine.

I want to swap out the 1070 Ti with a RTX 3080.

Along with the other components in my system, most online PSU calculators are telling me total wattage for the new configuration is about 1,100 Watts.

Do you think it is safe to continue using my 1200 Watt PSU?

The full component specs are as follows:
2 x GTX 1080 Ti
1 RTX 3080
1 SSD
1 NVMe PCI-Express 3.0
Fans: 5x 120mm, 1x 140mm
Intel Core i7-7700K
1 Water cooling combo pump/reservoir
2 x 16GB DDR4 SDRAM DDR4 3200

Depends on the quality of the PSU.

I use 2 x GTX1080Ti + GTX980Ti on a Corsair 1000i PSU (1000watt) all overclocked without problems.

1kw should be enough, but if I were You I would take a better look into 1200W units (like AXi line from Corsair)
