New to PC, is this the right setup? Also 4*2080 vs 2*2080 Ti

Hi, I've been working on Macs for the past 12 years, and finally decided on getting a PC workstation and move to GPU workflow.
I'm in the process of purchasing a PC build and would thought I would consult with the pros before moving on.
So first of all this is my build -
Supermicro SuperWorkstation SYS-7049GP-TRT
4 cores, 3.8 GHz base frequency | Intel Xeon Gold 5222
128GB (4x 32GB) of 2933MHz DDR4 ECC Registered Memory
1TB NVMe M.2 Solid-State Drive
1TB (4x 256GB) NVMe M.2 Solid-State Drive RAID 0
NVIDIA GeForce RTX 2080 8GB
NVIDIA GeForce RTX 2080 8GB
NVIDIA GeForce RTX 2080 8GB
NVIDIA GeForce RTX 2080 8GB
Am I missing something? Do the Supermicro workstation have a reputation? I chose that over the HP workstations since they don't support more than 2-3 GPUs. Also I chose Xeon Gold as it potentially supports up to 1.5 Tb of RAM vs maximum 256 Gb RAM the Xeon-W does.
I wanted to get more cores, but I just can't afford it as I'm already investing a lot here and figured it won't really help with Octane (I imagined if I did need to use CPU based renders for specific projects I should have more cores, but I don't know that I will, and also I can upgrade the CPU when the time comes) - will I be OK with this CPU regarding other GPU indirectly related matters (texture loading, high poly models, simulations, etc)?
Last question - Is it better for me to get 2 x GeForce 2080Ti 11Gb, than 4 x GeForce 2080 8Gb? Whether it's for workflow or for rendering?
ATM I couldn't afford 4 x 2080Ti, wish I could, but seems like I'm getting a good price for the above mentioned setup ($10,500). But if it's actually better for me to go with 2 Ti's than I would do it. I can always add more when the time calls for it, right?
Anything else I'm missing?
