Surface baking - Room with some objects - Unity

I have a scene, a room (floor, walls, windows, doors..) with some objects (table, chairs, lamps,..)

Want to bake the surfaces so I can use it in Unity.

What is the (best) way to start? 1 big object with everything inside, 1 uv map.
Or baking every smaller object with his own uv map?

I have no baking experience so please advice.

If this isn't a commercial gig and you are just screwing around, do it all as one 4k map on one object... You can always split stuff up later. But generally, breaking things up into multiple meshes/maps is the way to go, if you want to be more organized and efficient. Smart and efficient use of UV real estate is key, and you will find this out quickly as you get your stuff into Unity.
