Octane seems quite a product and thank you for that.
It seems I dont't know where to start. I am unable to find any help anywhere and I cant even setup a material to check the software out. Now don't think that It's my first time opening a software, but I cant manage this one

you can look a short video that show different features on the main site to start and play with octane render;)

just look at the videos like xeno said

you enable the material picker / glass ball with pipette icon,
select materials on your rendered image and swap/tune the materials on the right,
that's it
