F-Stop and ISO (at least according to the main developer of the Standalone) were always just controlling the Exposure, for which there is a seperate pin in OR.
Consequently they were removed in 2.15 but were reintroduced with 2.21 with the actual functionality like you have them in a DSLR camera. (F-Stop closes the iris at higher and opens it at lower values. Lower values thus meaning more exposure, but also a shallower depth of field, whereas high values would mean lesser exposure and a higher depth of field.)
The ISO usually controlls the sensors sensitiveness to light. This however, introduces noise at higher levels.
According to Paul, ISO and Sensor Width were both removed from the Poser plug-in because they are being automatically calculated. (Another pin responsible for determining how big the image sensor inside a camera is - compare APS-C or Full format sensors - and still fully fit the photographed image inside).
