Could someone explain how does the gradient texture works ? I don't really understand the behavior of this map which seems not to be like "classic" gradient maps and it has a strange interaction with lighting ...

Unfortunately you cannot use it as a texture to transition from one color to another. It is good for like random color texture set it to whatever gradient color you want click input method above it and assign random color texture.
