no it won't.
just make sure you get a decent motherboard that has 3 or more full PCI-E x16 slots.
not a 1 16x and 2 8x, or 8x and 4x. just 3 full PCI-E x16 slots.
use the quadro for modeling, leave the GTX480 unconnected for octane.
that's the best setup at the moment for heavy users.

Is it a problem to connect the quadro fx580 to a PCI-E X8 slot and the 2 gtx 470 to 2 PCI-E X16?

no, but i'd put your display adapter in one of the x16 slots for fast display performance.
put one 570 in one 16x and one 470 in one 8x, as octane does'nt really need much more than 2x or 4x PCI-E for propper rendering.
