2.21.1 - When im rendering in Live View, when i click and change exposure or gamma or any setting and press enter it restarts the scene. The only workaround is to change the number and without clicking enter change the response curve. Also is there any way to change this parameters when rendering to picture viewer? Would be nice to have, because it has a scroll/zoom that LV doesn't have for big renders.

It's expected behaviour if you camera with motion blur enable. Otherwise, some other object may cause this. Do you see this behaviour on a simple scene?
Making a big and scrollable buffer is a big work. Not planned yet before doing some other things.
