Hello,
Ive been meaning to make the switch from standard renderer for a while and I gave Octane a go
Im absolutely amazed by the quality of renders but I have one question

Is there any way to change the color of shadows or the ambient occlusion?
Having colored shadows/ao instead of the regular black makes a massive difference and I cant find anything on the topic anywhere

Nope, but you can use a Composite AOV group to add a Color AOV over the Ambient Occlusion pass:

Then use the output to mix it in another Composite AOV group:
