This might have already been covered in some of the earlier threads about streamlining the interface.

The only thing about the current UI that I realy do have an issue with though is the length of the Universal Material which, of course, has tons of options due to its versatility. But I'm constantly mousing up and down and zooming in and out to access its various settings. Would be great if there was a way to break it into clickable folding panels.

I'm afraid that's something not supported in Blender's node system.

Let me discuss with the team and see if we can bring the Metal/IOR panel (which is pretty heavy UX wise) into it's own node to keep main UM lighter.
